
Balinese Nyat-Nyat Chicken Recipe
Ingredients for Fluffy Rice:
- 2 cups Maknyuss Rice
- 3 cups water
Nyat-Nyat Chicken Ingredients:
- 1 chayote, cut into pieces
- 2 bay leaves
- 1 tsp turmeric powder
- 1 ½ tsp salt
- 2 tsp mushroom stock powder
- 1 block palm sugar
- 750 ml water
- ½ kg chicken, cut into pieces
Ground Spice Paste:
- 10 shallots
- 5 cloves garlic
- 4 curly red chilies
- 5 bird’s eye chilies
- 2 stalks lemongrass (white part only)
- 2 thumb-sized pieces of ginger
- 1 thumb-sized piece of aromatic ginger (kencur)
- 2 tsp coriander seeds
- ½ tsp white pepper
- ½ tsp black pepper
- ⅓ nutmeg seed
- 1 tsp shrimp paste
Instructions:
- Rinse Maknyuss Rice, then cook with 3 cups of water until soft and fluffy.
- Blend all the spice paste ingredients until smooth.
- Sauté the spice paste with bay leaves until fragrant.
- Add chicken pieces and stir until they change color and absorb the seasoning.
- Pour in water, mushroom stock, salt, turmeric powder, and palm sugar. Cook until the chicken is tender.
- Add the chayote and simmer until cooked through and the sauce thickens.
- Serve Nyat-Nyat Chicken warm with fluffy Maknyuss Rice.
