Balinese Nyat-Nyat Chicken Recipe

Ingredients for Fluffy Rice:

  • 2 cups Maknyuss Rice
  • 3 cups water

Nyat-Nyat Chicken Ingredients:

  • 1 chayote, cut into pieces
  • 2 bay leaves
  • 1 tsp turmeric powder
  • 1 ½ tsp salt
  • 2 tsp mushroom stock powder
  • 1 block palm sugar
  • 750 ml water
  • ½ kg chicken, cut into pieces

Ground Spice Paste:

  • 10 shallots
  • 5 cloves garlic
  • 4 curly red chilies
  • 5 bird’s eye chilies
  • 2 stalks lemongrass (white part only)
  • 2 thumb-sized pieces of ginger
  • 1 thumb-sized piece of aromatic ginger (kencur)
  • 2 tsp coriander seeds
  • ½ tsp white pepper
  • ½ tsp black pepper
  • ⅓ nutmeg seed
  • 1 tsp shrimp paste

Instructions:

  1. Rinse Maknyuss Rice, then cook with 3 cups of water until soft and fluffy.
  2. Blend all the spice paste ingredients until smooth.
  3. Sauté the spice paste with bay leaves until fragrant.
  4. Add chicken pieces and stir until they change color and absorb the seasoning.
  5. Pour in water, mushroom stock, salt, turmeric powder, and palm sugar. Cook until the chicken is tender.
  6. Add the chayote and simmer until cooked through and the sauce thickens.
  7. Serve Nyat-Nyat Chicken warm with fluffy Maknyuss Rice.
