
Black Squid Ink Rice Recipe
Ingredients for Fluffy Rice:
- 2 cups Maknyuss Rice
- 3 cups water
Ingredients for Squid:
- 6 shallots
- 4 cloves garlic
- 5 red chilies
- 5 bird’s eye chilies
- 2 roasted candlenuts
- 1/2 tsp roasted shrimp paste
- 500 g fresh squid
- 3 bay leaves
- 2 stalks lemongrass, bruised
- 3 cm galangal, bruised
- 2 tbsp tamarind water
- 1 tsp salt
- 1 tsp palm sugar
- 300 ml water
Side Dishes:
- Sambal
- Crackers
- Boiled eggs
- Cucumber
- Tomato
How to Make:
- Rinse Maknyuss Rice once, cook until done, then set aside.
- Sauté the blended spices until fragrant and cooked through. Add the aromatic spices, then stir in the squid. Sauté briefly, pour in water, and cook until the ink comes out. Adjust the taste, then remove and set aside.
- Take the cooked rice, add it to the remaining stir-fry in the pan, and mix until evenly coated.
- Serve the black squid ink rice with sambal, crackers, boiled eggs, cucumber, and tomato.
