
Purple Nasi Uduk (Coconut Rice)
Nasi Uduk Ingredients:
- 200 g Maknyuss Rice
- 100 ml coconut milk
- 150 g purple sweet potato, boiled and use the boiling water (up to 400 ml)
- 2 pandan leaves, tied into a knot
- 2 lemongrass stalks, bruised
- 2 thumb-length pieces of ginger, bruised
- 2 thumb-length pieces of galangal, bruised
- ½ tsp salt
Fried Vermicelli Ingredients:
- 1 pack vermicelli, soaked in warm water
- 3 shallots
- 4 cloves garlic
- 1 celery stalk
- 1 scallion
- 1 bunch mustard greens
- ½ tsp ground pepper
- 2 tbsp oyster sauce
- 1 tbsp soy sauce
- 3 ½ tbsp sweet soy sauce
Side Dishes:
- Fried chicken
- Fried anchovies
- Shredded omelette
Instructions:
- Rinse Maknyuss Rice once. Mix all the nasi uduk ingredients, stir well, and cook until done. Set aside.
- Sauté shallots and garlic until fragrant, then add vegetables. Add vermicelli, season with oyster sauce, soy sauce, and sweet soy sauce. Stir well and adjust the taste.
- Serve the Purple Nasi Uduk with fried vermicelli, fried chicken, fried anchovies, and shredded omelette.
