Steamed Pindang Rice Recipe

Fluffy Rice Ingredients:

  • 2 cups Maknyuss Rice
  • 3 cups water

Pindang Broth Ingredients:

  • 2 bay leaves
  • 2 lemongrass stalks
  • 2 kaffir lime leaves
  • 10 melinjo leaves
  • 1 tbsp palm sugar
  • 1 tsp tamarind water
  • 1 tsp beef stock powder
  • ½ tsp salt
  • 800 ml thin coconut milk
  • 200 ml medium coconut milk
  • 300 g beef shank

Ground Spices:

  • 6 shallots
  • 3 cloves garlic
  • 2 kluwek nuts, take the flesh
  • ½ cm roasted turmeric
  • ½ tsp coriander seeds
  • ¼ tsp shrimp paste
  • 3 candlenuts, roasted

Side Dishes:

  • Pindang egg
  • Potato fritters (perkedel)
  • Prawn crackers
  • Fried tempeh
  • Sambal

How to Make:

  1. Wash Maknyuss Rice once, cook until fluffy, then set aside.
  2. Sauté the ground spices, add beef, aromatic ingredients, and other seasonings. Cook over low heat until the flavors are absorbed and the meat becomes tender.
  3. Add medium coconut milk, cook again while stirring to prevent curdling, then add melinjo leaves and stir until wilted.
  4. Adjust the taste, then serve the fluffy Maknyuss Rice with Pindang Broth and the side dishes.
