Gudeg Rice Recipe

Ingredients for Fluffy Rice:

  • 2 cups Maknyuss Rice
  • 3 cups water

Ingredients for Gudeg:

  • 15 shallots
  • 7 cloves garlic
  • 5 pieces chicken
  • 5 pieces tempeh
  • 5 pieces tofu
  • 5 boiled eggs
  • 500 g young jackfruit, boiled to remove sap
  • 400 ml thick coconut milk
  • 800 ml water
  • 2 stalks lemongrass, bruised
  • 2 slices galangal
  • 5 bay leaves
  • 400 g palm sugar
  • ½ tsp salt

Ingredients for Areh Sauce:

  • 4 shallots
  • 3 cloves garlic
  • 3 candlenuts
  • 50 ml coconut milk
  • ½ tsp salt

How to Make:

  1. Rinse Maknyuss Rice once, cook until fluffy, and set aside.
  2. Sauté shallots and garlic until fragrant. Add chicken, jackfruit, water, and remaining spices. Cook until half done. Then, add tofu, tempeh, and eggs. Continue cooking until fully cooked, then set aside.
  3. Sauté the ground areh spices until fragrant, add water, adjust the taste, and set aside.
  4. Serve the fluffy Maknyuss Rice with Gudeg and drizzle with areh sauce.
