Nasi Daun Jeruk (Citrus Leaf Rice) Recipe

Rice Ingredients:

  • 400 g Beras Maknyuss
  • 800 ml thin coconut milk
  • 10 kaffir lime leaves, thinly sliced
  • 7 bay leaves
  • 1 pandan leaf
  • 2 stalks lemongrass, crushed
  • ½ tsp salt

Chicken Karaage Ingredients:

  • 3 cloves garlic, grated
  • 2 thumb-sized pieces of ginger, grated
  • 1 tbsp sesame oil
  • 3 tbsp soy sauce
  • ½ tbsp black pepper
  • 500 g chicken thighs

Coating Ingredients (mix together):

  • 50 g all-purpose flour
  • 10 g cornstarch

How to Make:

  1. Rinse Beras Maknyuss once. Combine all rice ingredients, stir well, and cook until done. Set aside.
  2. Coat the chicken with the flour mixture, then deep-fry in hot oil until golden and cooked through. Set aside.
  3. Serve the fragrant Nasi Daun Jeruk with crispy Chicken Karaage.
